Ingredients
- 3 medium potatoes (boiled & mashed)
- 1 cup cauliflower (finely chopped & boiled)
- ½ cup green peas (boiled)
- 2 tbsp butter (generous for richness)
- 1 large onion (finely chopped)
- 2 tomatoes (finely chopped or pureed)
- 1 capsicum (finely chopped)
- 1 tsp red chilli powder (adjust to taste)
- Salt as required
- 1 tsp ginger-garlic paste
- Fresh coriander leaves (chopped)
- Lemon wedges
Serving Suggestion
- Toast pav (bread rolls) with butter until golden.
- Serve hot bhaji topped with butter, chopped onions, and lemon wedges.

Methods
Prepare the base
Heat butter in a pan. Add chopped onions and sauté till soft and slightly golden.
Build the flavour
Add ginger-garlic paste and sauté briefly. Add tomatoes and cook till they turn soft and buttery.
Add veggies
Add capsicum, boiled potatoes, peas, and cauliflower. Mash everything together in the pan for that authentic texture.
Add the magic
Sprinkle White Horse Pav Bhaji Masala, red chilli powder, and salt. Mix well and cook for 5–7 minutes. Add a little water to adjust consistency.
